Italian egg pasta parcels filled with the classic pairing of roasted tomatoes, soft mozzarella cheese and fragrant basil. Cook over the hob for four minutes. Gently drain pasta when cooked, toss in melted butter, extra virgin olive oil or your favourite sauce and sprinkle with grated Parmesan cheese. Serves 2.
