Trewithen’s irresistible clotted cream is made by heating whole cow’s milk using water baths and then leaving it in shallow pans to cool slowly. During this time, the cream content rises to the surface and forms “clots” hence the name. The proper Cornish way to enjoy a cream tea is to break the scone with your hands, before spreading each side with a layer of jam followed by a generous dollop of Cornish Clotted Cream. The jam prevents the warm scone from melting the cream!
